Our New Pizza - Cavolo NeroCRAZY GOOD!!! I can hear it now….. “Kale on a pizza?! Are you crazy?!” Well, to answer that question there are three things that come to mind. First of all and most importantly, it tastes pretty darn good on one of our pizza crusts. Secondly, kale is quite the wonder and is considered by many to be a Superfood because it is loaded with vitamins C, A and K. It is also rich in essential minerals and contains a heavy dose of antioxidants. It is super healthy and good for you! And, finally, you’re right. I am a little crazy! The Cavolo Nero is an interpretation of a pizza in Naples that traditionally has braised rapini on it. Instead of the rapini I choose to use lacinato kale which in Italy has many names, including Cavolo Nero. While kale is all the rage these days in raw salads, it turns out that it has more health benefits if it is eaten cooked. For this pizza the kale has been braised with salume lardo, onions, lemon juice and lots of fresh cracked black pepper. It is quite wonderful served by itself and it is even better when it is served on our pizza! The Cavolo Nero pizza starts out with extra virgin olive oil topped with plenty of delicious braised lacinato kale, ham, fresh mozzarella with a sprinkle of grana padano. I hope you can put aside any reservations of eating kale on a pizza and try something new because this pizza is quite special.
